Great Coffee

It is a long term process, full of details and hard work to accomplish high quality coffees. From planting to the first harvest, it takes over 2,5 years of intense care and dedication to the new young coffee trees.

Firstly, the coffee trees produce flowers to make seeds which reach the adequate Brix (°Bx ) content around winter time, normally when coffee cherries have developed their full flavor potential.

Careful harvesting is a critical step in producing high quality coffees. If beans are picked unripe their full potential will not be unlocked, and even a few beans can substantially affect the cupping of a specific microlot. This sensitivity has become apparent in the farm thanks to our rigid lot separation, another aspect of our careful approach to harvesting.

The berries are then manually (or mechanically) collected and transferred to the terrero, drying tables (where we manually select the cherries) and, ultimately, to a coffee greenhouse (special, micro and nanolots), which secure a slower drying process to the coffee. Mechanical dryers are also utilized and fully automated.

When the berries reach its right humidity content after the drying process, they are transferred to one of the thirty unique fully separated tulhas, units in the farm where the coffee berries will rest for a minimum of 120 days, quietly and with no human intervention.

AmaroDias SPECIAL

OVERVIEW

AmaroDias Special is a collection of high elevation Acaia terroirs, a consistent foundation for an expresso coffee, opulent and full bodied. AmaroDias Special is available in natural process and ranges in size all the way down to less than one bag of green coffee. WHERE IT GROWS

AmaroDias Special come from Acaia variety growing at terroir C09, C11 C21 and C28, areas of high elevation at Fazenda AmaroDias.

Yellow BOURBON AD Collection

OVERVIEW

The Yellow Bourbon, probably one of the most picturesque coffee lands in Fazenda AmaroDias, is characterised by its surrounding, high biodiversity and closeness to the forest and eucalyptus agro forestry. Its persistent pursuit of quality and the fact that we go far beyond the legal minimum, these coffees are particularly sought after. It has a touch of chocolate on the palate and well-knit tannins and a good structure on the finish. We find that the aromatic qualities that make Yellow Bourbon coffee unique, is full of surprises and has even more that this to offer. TOPAZIO Collection

OVERVIEW

Topazio collection is made from a blend of Mundo Novo and Catuai varieties, shows the classic clean and bright cup. Two coffee varieties enjoy real cult status among the coffee society in Brazil. It flourishes very well on the clay based soils and has a second fermentation process. This explains its yeasty aromas as well as the fruity notes of pear and apple. On the palate, this coffee is very refreshing and it is one of the preferred varieties for a cold brew preps and its related drinks.

WHERE IT GROWS

Topazio collection comes from Topazio coffee varieties and it is growing on C3, C22, C24and C32 coffee areas.

ATTRIBUTES

Topazio has attributes such as fruity, medium acidity and body, and is available in natural process.
